  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or turkey
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, diced avocado, cornbread, tortilla chips

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Add ground meat to the skillet and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  4. Transfer the browned meat and onion mixture to a slow cooker.
  5. Add crushed tomatoes, kidney beans, black beans, beef broth, chili powder, cumin, smoked paprika, and oregano to the slow cooker.
  6. Stir everything together to combine.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until flavors have melded and the chili is heated through.
  8. Before serving, taste and adjust seasonings with salt and pepper as needed.
