- 1 ½ cups granulated sugar

- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup grated zucchini (about 1 medium zucchini)
- ½ cup vegetable oil
- 3 large eggs
- 1 tablespoon lemon zest
- ¼ cup fresh lemon juice
- 1 teaspoon vanilla extract
