4 chicken thighs, skin-on and bone-in
2 tablespoons olive oil
2 large onions, thinly sliced
4 cloves garlic, minced
1 cup chicken broth
1 cup pitted dates, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
Salt and pepper, to taste
Fresh cilantro, for garnish
1 tablespoon balsamic vinegar (optional)
Instructions
In a large pot, heat the olive oil over medium heat.
Add the chicken thighs, skin-side down, and cook until browned, about 5-7 minutes. Flip and cook for an additional 5 minutes. Remove the chicken and set aside.
In the same pot, add the sliced onions. Cook for 10-12 minutes, stirring often, until they are soft and caramelized.
Stir in the minced garlic and cook for another minute until fragrant.
Sprinkle in the ground cumin and coriander. Mix well to combine and cook for 2 minutes.
Pour in the chopped dates and chicken broth. Stir to combine all ingredients.
Place the browned chicken thighs back into the pot, skin-side up. Bring to a simmer.
Cover the pot and reduce the heat to low. Let it cook for 30 minutes until the chicken is cooked through and tender.
Taste the sauce and adjust seasoning with salt, pepper, and balsamic vinegar if desired.
Remove from heat, garnish with fresh cilantro, and serve immediately.
