  • 2 tbsp Rice Vinegar (Can substitute with apple cider or white vinegar)
  • 1 tbsp White Miso (Can substitute with tahini for a vegan option)
  • 1 tbsp Sriracha (Adjust to taste or omit for milder sauce)
  • 1 tbsp Coconut Sugar (Can substitute with regular sugar or maple syrup)
  • 2 cloves Minced Garlic (Can use garlic powder as alternative)
  • 1 tbsp Grated Ginger (Can substitute with ground ginger)
  • 1.5 tbsp Sesame Seeds (Can substitute with hemp seeds for nut-free)

Instructions

  1. Toast the sesame seeds in a medium skillet over medium heat for 5–7 minutes until lightly browned and fragrant.
  2. Wash and peel the rainbow carrots, then julienne them into thin strips and place them in a large bowl.
  3. Chop the scallions, cilantro, and basil; sprinkle them over the carrots and toss gently.
  4. Blend all dressing ingredients together until smooth, or whisk them for a chunkier texture.
  5. Pour the dressing over the carrot mixture; toss thoroughly to coat.
  6. Cover and refrigerate for at least 1 hour before serving.
  7. Toss again before serving and garnish with additional sesame seeds and red pepper flakes if desired.
