Spicy Roasted Cauliflower Tacos: An Incredible Ultimate Recipe

  • 1 medium head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage or coleslaw mix
  • ½ cup diced tomatoes
  • ¼ cup chopped fresh cilantro
  • 1 avocado, sliced
  • Lime wedges, for serving
  • Optional: Hot sauce or creamy sauce for drizzling

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, chili powder, cumin, garlic powder, salt, and pepper until evenly coated.
  3. Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 20 minutes, or until golden brown and tender.
  4. While the cauliflower is roasting, warm the tortillas on a skillet over medium heat for about 30 seconds on each side.
  5. In a separate bowl, mix the shredded cabbage or coleslaw with diced tomatoes and chopped cilantro.
  6. Once the cauliflower is ready, assemble the tacos by placing a generous amount of roasted cauliflower on each tortilla. Top with the cabbage mixture and add avocado slices.
  7. Drizzle with hot sauce or your favorite creamy sauce, if desired.
  8. Serve the tacos with lime wedges on the side for an extra burst of flavor.
