  • 8 ounces mushrooms, sliced (shiitake or button)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon chili paste (adjust to taste)
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1 cup bell peppers, sliced (optional)
  • 2 green onions, chopped
  • Cooked rice for serving

Instructions

  1. Prepare all ingredients by chopping vegetables and measuring sauces.
  2. Heat vegetable oil in a large wok or skillet over medium-high heat until shimmering.
  3. Add minced garlic and grated ginger to the pan and sauté until fragrant, about 30 seconds.
  4. Add shrimp to the pan and stir-fry until pink and opaque, about 3-4 minutes.
  5. Add sliced mushrooms and stir-fry for another 2-3 minutes until softened.
  6. If using, add sliced bell peppers and cook for an additional 2 minutes.
  7. Pour in soy sauce, oyster sauce, chili paste, sugar, and black pepper. Stir to combine.
  8. Add chopped green onions and mix well, allowing them to warm for one minute.
  9. Remove from heat and serve hot over cooked rice.
