Delight in these Spring Roll Bowls, a vibrant meal featuring shrimp, rice noodles, and crunchy vegetables, all drizzled with a creamy peanut sauce.

Ingredients

Scale
  • 1 pound Shrimp
  • 8 ounces Rice Noodles
  • 2 cups Vegetables
  • 1/2 cup Peanut Butter
  • 2 tablespoons Lime Juice
  • 2 tablespoons Honey
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Sriracha
  • 1 teaspoon Fish Sauce
  • 1 tablespoon Fresh Ginger
  • 2 cloves Garlic
  • 1/4 cup Cilantro
  • 2 pieces Lime Wedges

Instructions

  1. Prepare the Fresh Vegetables: Wash and prep your colorful veggies. Thinly slice the red bell pepper and cucumber, shred the red cabbage, and julienne the carrots. Arrange the vegetables vibrantly on a cutting board.
  2. Cook the Rice Noodles: Bring a pot of water to a boil and add the rice noodles. Cook according to package instructions until tender, about 4–6 minutes. Drain and rinse under cold water.
  3. Whisk Together the Peanut Sauce: In a medium bowl, combine the peanut butter, lime juice, honey, soy sauce, sriracha, fish sauce (if using), ginger, and grated garlic. Whisk until smooth.
  4. Cook the Shrimp: Heat olive oil in a skillet over medium-high heat. Season shrimp with salt and pepper, then add to the skillet. Cook for 1–2 minutes on each side until pink and opaque, about 4–6 minutes total.
  5. Assemble the Bowls: Place a portion of rice noodles at the base of each bowl. Top with cooked shrimp and fresh vegetables.
  6. Drizzle with Peanut Sauce: Drizzle the peanut sauce over each bowl and garnish with cilantro and lime wedges.

Notes

  • Customize vegetables to your preference.
  • Substitute shrimp with tofu or chicken if desired.
  • Use maple syrup for a vegan option.
