Scale
  • 4 large sweet potatoes
  • 1/4 cup unsalted butter, softened
  • 2 tablespoons white miso paste
  • 1/4 cup milk (or plant-based alternative)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon (optional)
  • Chopped chives or scallions for garnish (optional)

Instructions

  2. Peel and cut the sweet potatoes into evenly sized chunks.
  3. Spread the sweet potato chunks on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for 25-30 minutes, or until tender.
  4. Once cooked, let the sweet potatoes cool slightly, then transfer them to a large mixing bowl and mash until smooth.
  5. In a separate bowl, combine the softened butter and white miso paste until well mixed.
  6. Add the miso butter mixture to the mashed sweet potatoes. Pour in the milk and add salt, black pepper, and cinnamon (if using). Stir until creamy and well combined.
  7. Taste and adjust seasoning as needed.
  8. Serve warm, garnished with chopped chives or scallions if desired.

Notes

  • Use fresh, firm sweet potatoes for the best flavor.
  • White miso paste offers a milder flavor; red miso is more robust.

  • Consider adding nutmeg or ginger for extra warmth.
