Vanilla Chia Seed Panna Cotta is a creamy and healthy dessert made with chia seeds and coconut milk.

Ingredients

  • 2 cups coconut milk (or any milk of choice)
  • 1/4 cup granulated sugar (or honey)
  • 1 tablespoon vanilla extract
  • 2 tablespoons gelatin powder (or agar-agar for a vegetarian option)
  • 1/2 cup chia seeds
  • Pinch of salt
  • Fresh fruits or berries for topping (optional)

Instructions

  1. Prepare Gelatin: In a small bowl, sprinkle gelatin over 1/4 cup of cold water. Let it sit for about 5 minutes to bloom.
  2. Heat Milk: In a saucepan, combine coconut milk, sugar, vanilla extract, and salt. Heat over medium heat until it’s warm but not boiling.
  3. Once the milk mixture is warm, remove it from heat. Stir in the bloomed gelatin until fully dissolved.
  4. Stir in the chia seeds until well combined. Allow the mixture to cool for a few minutes.
  5. Divide the mixture among serving cups or molds. Cover with plastic wrap or a lid.
  6. Place the cups in the refrigerator and let them chill for at least 4 hours or overnight until set.
  7. Once set, remove the panna cotta from the fridge. Top with fresh fruits or berries if desired.
