- 1/4 cup granulated sugar (or honey)
- 1 tablespoon vanilla extract
- 2 tablespoons gelatin powder (or agar-agar for a vegetarian option)
- 1/2 cup chia seeds
- Pinch of salt
- Fresh fruits or berries for topping (optional)
- Prepare Gelatin: In a small bowl, sprinkle gelatin over 1/4 cup of cold water. Let it sit for about 5 minutes to bloom.
- Heat Milk: In a saucepan, combine coconut milk, sugar, vanilla extract, and salt. Heat over medium heat until it’s warm but not boiling.
- Once the milk mixture is warm, remove it from heat. Stir in the bloomed gelatin until fully dissolved.
- Stir in the chia seeds until well combined. Allow the mixture to cool for a few minutes.
- Divide the mixture among serving cups or molds. Cover with plastic wrap or a lid.
- Place the cups in the refrigerator and let them chill for at least 4 hours or overnight until set.
- Once set, remove the panna cotta from the fridge. Top with fresh fruits or berries if desired.
