Ingredients:

  • 1 box lemon cake mix
  • 1/3 cup of oil
  • 2 eggs

Instructions:

  1. Preheat your oven to 350°F (175°C). Line an 8×8 pan with parchment paper.
  2. In a mixing bowl, combine the lemon cake mix, oil, and eggs. Mix until well combined. Avoid adding water.
  3. Press the cake mixture evenly into the prepared pan.
  4. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  5. Allow the cake to cool completely. You can expedite the process by placing it in the fridge for a while.

Blueberry Frosting:

  • 3 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1-2 tbsp mashed blueberries (adjust to taste)
  • Fruit juices can be added for desired consistency

Instructions:

  1. In a bowl, beat the softened cream cheese until smooth.
  2. Gradually add the powdered sugar, mixing until well incorporated.
  3. Stir in the mashed blueberries until evenly distributed. Adjust the amount according to your preference.
  4. For a thinner consistency, incorporate fruit juices as needed.

Assembly:

  1. Once the brownie has cooled completely, spread the blueberry frosting evenly over the top.
  2. Chill the frosted brownies in the fridge for at least 30 minutes to allow the frosting to set.
  3. Cut into squares and indulge in the delightful combination of lemon and blueberry flavors!
